Winemaking; Crush, destem, open ferment - 7 days and air bag press to retain all flavour.


TASTING NOTES

Aroma; Ripe cherry fruit nose with some spiciness
Palate; Supple, generous mouth filling palate. Balanced with hints of oak.
Assessment; A positive wine with lift and chacter: of Mid weight and good flavour.
Serve; Room temperature or slightly chilled with prosciutto, veal, pork sausage & herbs, pizza, Reggiano cheese or venison braised in cherries.
Cellaring; Great now. Screw cap will retain fruit intensity and flavour for many years. A speciality wine.
