Rookery, Kangaroo Island, isolated and pristine. Vineyard 35 deg 45 mins South. Warm 1500 heat degree days ( HDD ) Maritime. Cool Summers and warm Winters.
Soils - sandy loam over clay. Limestone parent material.

VINTAGE

The 2003 growing season was an ideal season for wine grapes. Autumn was extremely mild free from extreme temperatures and rain enabling the fruit to have a long ripening period.
The Cabernet Sauvignon was hand picked on the 3rd of May. The small crop of 2 tonne per acre produced small berries with fruit of intense flavour and strong colour.

Analysis; Alcohol 13.0% by volume Ph 3.6 TA 5.88 g/l as tartaric.
Colour; Good colour depth, some purple hue.
Winemaking; Crush, destem, open ferment, airbag pressed. Medium Oak - 18 months.


TASTING NOTES

Aroma; Complex earth and ripe berry fruit. Some smokey Oak.
Palate; Generous, supple mid palate, well balanced with good complexity and a savoury finish.
Assessment; A lovely wine with excellent depth and complexity.
Serve; Ideal with rare steak, spiced chicken, pork chops & rosemary, pink roast lamb & mint sauce, rolled & stuffed boned loin of lamb.
Cellaring; Able to be drank now, best left until 2006. Will cellar and improve for up to 10 years.
