SPARKLING SANGIOVESE 2012
The 2012 vintage at Rookery neared perfection, following mild cool conditions which allowed the fruit to ripen very slowly, leaving the berries with strong flavours and wonderful aromas. This sparkling wine was aged in the bottle for a minimum of 18 months, an essential part of the ‘méthode traditionnelle’ process.

Aroma; Cherry, floral liquorice, toast and port aromas.
Palate; The palate is soft and creamy with balanced acidity and fruit. There is great length of floral and cherry characters.
Assessment; the extended lees contact prior to disgorgement, gives this sparkling a great complexity, yet remains well balanced. Slightly sweet, to balance the rich red bubbles.
Serve; Ideal with roast meats. Great for Christmas lunch or as a pre –dinner drink with hors d’œuvre, pate and dips. A true conversation starter.
